NY Style Bagels

Delicious bagels ready to be topped with cream cheese.

Overview

Yield: 8 bagels

Ingredients

  • 6g active dry yeast
  • 19g granulated sugar
  • 300mL warm water
  • 440g bread flour
  • 6g salt

Steps

  1. Mix together 120mL warm water, sugar, and yeast. Let stand for 5 minutes until bubbly.
  2. Add flour and salt to mixer bowl, mix for 1 minute with paddle attachment.
  3. Add yeast mixture to mixer bowl, switch to dough hook, knead for about 10 minutes until you have a moist, firm dough.
  4. Transfer dough to oiled bowl, proof for 1 hour.
  5. Punch down dough, let rest for another 10 minutes.
  6. Divide dough into 8 parts, form into rounds. Stretch the ring to about 1/3 the diameter of the bagel and place on a parchment-lined baking sheet. Cover with damp towel and rest for 10 minutes.
  7. Preheat oven to 425°F
  8. Bring large pot of water to boil
  9. Boil bagels for 1 minute per side, then transfer back to baking sheet.
  10. Add toppings
  11. Bake for 20-25 minutes until golden brown
