Tasty, toastable english muffin loaves
Overview
Yield: 2 loaves
Ingredients
- 5 cups all-purpose flour, divided
- 14g active dry yeast
- 1 tbsp sugar
- 2 tsp salt
- .25 tsp baking soda
- 2 cups warm whole milk (120° to 130°)
- .5 cup warm water (120° to 130°)
- cooking spray
- cornmeal
Steps
- In a mixer bowl, combine 2 cups flour, yeast, sugar, salt and baking soda.
- Add warm milk and water, beat on low speed for 30 seconds, scraping bowl occasionally.
- Add remaining flour, mix with dough hook lightly until just mixed
- Spray 2 8x4 pans with cooking spray, and then coat with cornmeal
- With wet hands, transfer dough evenly to pans (it’s really sticky!)
- Sprinkle top with cornmeal, let rise for 45 minutes
- Preheat oven to 375°F
- Bake for 35 minutes until golden brown
- Remove from pans immediately and let cool on wire rack
- Slice and toast, top with butter, cinnamon sugar, jelly, peanut butter, etc.
