English Muffin Bread

Tasty, toastable english muffin loaves

Ingredients

  • 5 cups all-purpose flour, divided
  • 14g active dry yeast
  • 1 tbsp sugar
  • 2 tsp salt
  • .25 tsp baking soda
  • 2 cups warm whole milk (120° to 130°)
  • .5 cup warm water (120° to 130°)
  • cooking spray
  • cornmeal

Steps

  1. In a mixer bowl, combine 2 cups flour, yeast, sugar, salt and baking soda.
  2. Add warm milk and water, beat on low speed for 30 seconds, scraping bowl occasionally.
  3. Add remaining flour, mix with dough hook lightly until just mixed
  4. Spray 2 8x4 pans with cooking spray, and then coat with cornmeal
  5. With wet hands, transfer dough evenly to pans (it’s really sticky!)
  6. Sprinkle top with cornmeal, let rise for 45 minutes
  7. Preheat oven to 375°F
  8. Bake for 35 minutes until golden brown
  9. Remove from pans immediately and let cool on wire rack
  10. Slice and toast, top with butter, cinnamon sugar, jelly, peanut butter, etc.
