Homemade NY-style pizza, 10x better than the first attempts.
Overview
Yield: 4 16" pizzas
Ingredients
- 800g Caputo Farina 00 flour
- .5tsp instant dry yeast (.5 tsp)
- 2.5tsp kosher salt
- 2tsp sugar
- 500g lukewarm water
- 1tbsp olive oil
Steps
- In mixer, mix flour, salt, yeast, and sugar until well combined.
- Add in water, mix until lightly incorporated
- Add in oil, knead with dough hook for 5 minutes
- Let rest in bowl for 10 minutes
- Knead again with dough hook for 3 minutes.
- Divide dough into 4 parts, transfer to oiled large resealable container(s) (tupperware)
- Move dough to refrigerator, best results with 48 hours of refrigerator rest
- When ready, remove dough from refrigerator 1 hour prior to use
- Gently stretch dough into 14-16 inch rounds, top with sauce, cheese, toppings, and bake at high heat in pizza oven.
