NY Style Pizza Mk. 2

Homemade NY-style pizza, 10x better than the first attempts.

Overview

Yield: 4 16" pizzas

Ingredients

  • 800g Caputo Farina 00 flour
  • .5tsp instant dry yeast (.5 tsp)
  • 2.5tsp kosher salt
  • 2tsp sugar
  • 500g lukewarm water
  • 1tbsp olive oil

Steps

  1. In mixer, mix flour, salt, yeast, and sugar until well combined.
  2. Add in water, mix until lightly incorporated
  3. Add in oil, knead with dough hook for 5 minutes
  4. Let rest in bowl for 10 minutes
  5. Knead again with dough hook for 3 minutes.
  6. Divide dough into 4 parts, transfer to oiled large resealable container(s) (tupperware)
  7. Move dough to refrigerator, best results with 48 hours of refrigerator rest
  8. When ready, remove dough from refrigerator 1 hour prior to use
  9. Gently stretch dough into 14-16 inch rounds, top with sauce, cheese, toppings, and bake at high heat in pizza oven.
